What to do with Left over Pineapple

As floridians we love to eat our pineapple fresh.  Jenn had this left over pineapple hanging out in her fridge, after a week she decided it was time to give it a spin...


We put up a challenge on Facebook, and decided to go with an oldie but a goodie.  Jenn decided to spin Fruit Oatmeal Bars, from an eighties Better Homes and Gardens cookbook.

She has made this recipe several times with various fruits, but this is the first time she used pineapple. 

Following the recipe for the Apricot Coconut Filling, Jennifer replaced the apricot and coconut with her left over pineapple.


Then she cut the butter into the dry ingredients, until it was thoroughly corporated.  She stresses that you have to make sure there are no chunks of butter hanging around in the mixture.  It should hold together when you squeeze a bit together. 

Now Jenn takes 2/3 of a cup of the mix and puts it to the side.  The rest she pours into the pan and presses it tightly.  Next she spreads the pineapple filling, and the sprinkles the reserved mixture over the top and bakes for 35 minutes.

These Pineapple Oatmeal Bars are amazing!!  Please let us know how you like them...
