Melanie
made some yummy cookies for one of her best friend for her birthday,
who also had a buffet of sushi for her birthday dinner. Her friend,
Cheri, loves crème brulee.
Creme brulee
So Melanie took a spin on the normal
crème brulee by making them into cookies.
The
crème brulee filling was a quick (technically cheating) brulee that
features a French Vanilla Instant Pudding mix. Melanie mixed the
pudding with milk and heavy cream. The milk and heavy cream were
cold, and once the pudding mix was added, it was instantly
thickening.
Once the mix was well incorporated, she put it into the
fridge to set up while she made the cookie base.

The
cookies themselves are basically a soft sugar cookie. Melanie took
that recipe for a spin as well and added some orange extract to the
dough. The dough was rolled into about 2 in balls and placed 2
inches apart on a baking sheet. The cookies only took about 10-12
minutes in a preheated 350* oven.
Once
the cookies were done baking, they were immediately pressed with the
back of a spoon to create a little well in the middle. Taking the
pudding out of the fridge, she put a little spoonful into the well of
the cookie.
After all the cookies had the pudding on, she sprinkled
brown sugar on them. This part can also be done with Turbinada
sugar.
Under
the broiler, the cookies went, not long at all, just enough to melt
the sugar. This part can be done with a kitchen torch, which Melanie
has, but she ran out of butane. Let's face it, Melanie loves playing
with fire. :)
